Oregon Coast Culinary Institute offers virtual cooking classes to the community

Coos Bay, OR – Southwestern Oregon Community College’s Oregon Coast Culinary Institute is excited to be offering community cooking classes, done virtually, throughout winter term. Classes include a food supply box that participants pick-up at OCCI the day before each class, from 3 to 5 pm. We have a no-contact procedure. Face coverings are required. All classes are conducted live using Zoom from 11am to 2 pm. Each class: $75 (unless otherwise noted). Please register by noon on the Wednesday before your desired class. This helps us order adequate amounts for the food supply boxes.

Instructions for picking up your food supply box and joining the Zoom virtual class will be emailed to you.

Do you want to learn how to make a killer sauce to compliment any meal? In this course you will learn to make a variety of sauces that Chef Torres has chosen to explore. The possibilities range from the five classical grand sauces that are the basis for most other sauces: béchamel, velouté, brown or espagnole sauce, tomato sauce, and hollandaise.

In this demonstration you’ll learn what you need to know to cook and present a delicious Valentine’s day meal for two. This is demonstration only, there is no ingredient box.

There will be an option to purchase a food supply box the week of Feb. 8 in order to cook the Valentines meal. Attendance at the demonstration is not required to purchase the ingredients box, recipes will be included. Call OCCI at 541-888-7309 to arrange for a box. Proceeds from the ingredient boxes will go to the OCCI Competition Cooking Team. 


Chef Gaudette will guide you through the mysterious process that it takes to care for a sourdough start and create amazing bread in this hands-on class. Along your journey Chef will break it down to understandable basics so that you can continue to create delicious sourdough bread in your own kitchen. What we’ll cover: making a starter, mixing, fermentation, and shaping.

This class will explore a surprise soup chosen by Chef Torres. The soup will either be a clear or thick soup. Clear soups include flavored stocks, broths, and consommés, and include soups such as chicken noodle soup and French onion soup. Thick soups include cream and purée soups, such as bisques or cream of tomato soup.

In this hands-on class you will receive expert instruction on creating Chef Torres’ chosen menu of truly tempting desserts that will take your meal to the next level. You’ll want to add these new skills and menus to your cooking repertoire.
