Community Cooking Classes offered spring term

Coos Bay, OR – Southwestern Oregon Community College’s Oregon Coast Culinary Institute is excited to be offering community cooking classes, done virtually, throughout spring term. Classes include a food supply box that participants pick-up at OCCI the day before each class, from 3 to 5 pm. We have a no-contact procedure. Face coverings are required. All classes are conducted live using Zoom from 11am to 2 pm. Each class: $75 (unless otherwise noted). Please register by noon on the Wednesday before your desired class. This helps us order adequate amounts for the food supply boxes.

CRT 0165 65  EXPLORING SEAFOOD COOKERY

Living in the Bay Area means we’re lucky enough to experience incredible fish and shellfish all year long. Knowing the various cooking methods will help you produce appetizers, soups like cioppino, and entrees such as crispy skin salmon with our local bounty. You will learn how to shop for the freshest seafood and what to do with it when you get it home. In addition to items named, you can also expect to learn to make miso glazed black cod and trout with brown butter.

CRT 0120 65  GRILLING AND SMOKING

This course will demonstrate the techniques of grilling and smoking various types of meats. You’ll learn to create rubs and sauces that will elevate your BBQ experience to new levels. Due to the extensive process of some of the recipes, and the specialized equipment required, we won’t be providing an ingredients box before the class. Instead, you will receive a box of fully cooked meats after the class is completed. Box pickup will take place on Saturday, May 15, from 2:00 to 4:00 pm at OCCI, just in time for dinner! Recipes explored may include, but are not limited to, brisket, pork ribs, and chicken.

Embrace the summer weather and spend some time outside beating the heat with a tasty treat. Taking advantage of the in-season fruits, this course will give you a fresh and inspiring outlook on some of summers favorite desserts, like fruit tarts, ice cream sandwiches, lemon curd, and more.
